Healthy Mint Chocolate Chip 'ice cream'
We can’t wait any longer… ice cream season is coming! Just in time for St Patty’s day, we’ve found a green treat that is easy to make, chock-full of healthy alternatives, and delicious!
If you are a mint-chocolate chip lover, this one’s for you. Get your blender and your supplements out! This one’s dairy-free, vegan, and could easily be considered 2-3 servings of your daily fruit & veg
Mint Chocolate chip ‘ice cream’:
- 2 frozen banans 
- 1 cube frozen spinach 
- 1/3 cup almond milk (or dairy-free alternative) 
- 1/2 scoop collagen powder (optional, helps thicken, but can be removed to make vegan) 
- 1/2 scoop Vege Greens (or green powder supplement) 
- 1 tbsp maple syrup 
- 2-3 drops peppermint oil 
- 1 tbsp cacao nibs, to be added at the end 
Put all ingredients except for cacao nibs in the blender. Blend on high for 1 min until smooth, thick and a minty-green colour. Add cacao nibs and pulse for 10 sec to mix. Scoop into serving dishes and enjoy!
* I like to have one portion immediately, and the others I freeze in small Mason jars for treats later. Just move from freezer to fridge at least 1 hour before eating.
* If this is for dessert, maybe some mini chocolate chips on top too!
